Ingredients

4 slices whole grain flax bread
1 large peach, pitted and sliced
4 ounces sliced mozzarella cheese
8 basil leaves
Olive oil
Salt and pepper, to taste

Instructions

Pre-heat a skillet or grill pan over medium heat and lightly drizzle olive oil. Place two slices of bread in pan and layer mozzarella, peaches and basil leaves on top. Season with salt and pepper and top each with another slice of bread. Cook the sandwiches, pressing down with a spatula until golden brown on one side, about 2 minutes. Flip to cook the other side until golden brown and the cheese is melted, about 2 more minutes. Enjoy immediately.
